Italian Wedding Cookies

These are Nicole's favorite cookies, I made them for her wedding last year and for her birthday, today. They are EASY and come out really well - so it was worth posting the recipe.

Italian Wedding Cookies
1 1/2 cups unsalted butter
3/4 powdered sugar
1 t salt
1 1/2 cups ground almonds (or almond meal)
1 1/2 T vanilla
3 cups flour

Preheat the oven to 325 F, line cookie sheets with parchment paper. Also, prepare a baggie with powdered sugar for rolling the cookies (want to do this while they are still warm)

Beat the butter and sugar until fluffy, add the salt, then the vanilla, then almonds. Slowly add in the flour, being careful to not overmix (or make flour fly everywhere....)

Roll ~1-1 1/2t worth of dough into balls and place on cookie sheet. These don't spread much at all, so you can pack them pretty close together.

Bake at 325 for 20 minutes. You don't want them to brown - just get a golden twinge - or they will look gross rolled in the sugar.

Allow to cool enough to be handled, roll in powdered sugar. Enjoy.
