My dear friends at epicurious had just the thing (for me to modify - I mean, like *I* am going to just follow a recipe? nah) and they are delish. Here is the recipe - with my modifications....
Oatmeal-Apricot-Pistachio Cookies
1/2 cup unsalted butter, softened (of course, I like Plugra)
1 cup light brown sugar
1/2 teaspoon vanilla
1 large egg
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups old-fashioned rolled oats (not quick-cooking)
3/4 cup dried apricots cut into pieces
1/2 cup shelled pistachios
Preheat the oven to 350F. Put the racks in upper and lower third position of the oven. Line your baking sheets with parchment paper.
Beat the butter and sugar until fluffy, then beat in the vanilla. Add the egg and beat until combined well. Sift together the flour, baking soda, salt, and cinnamon then add to mix at low speed until just combined. Fold in oats, apricots, and pistachios.
Spoon rounded tablespoons of dough about 2 inches apart onto baking sheets. Bake cookies, switching position of sheets halfway through baking, until golden brown, 16 to 18 minutes.
