What makes a daisy lazy?

You'd have to ask my mom.....and don't expect the answer to make any sense. This recipe, originally from Bisquick is posted for SGS - and has not yet been altered or modified....bet we see it at work soon, for the true test.

Lazy Daisy Cake
mom says that she doubles the recipe for both the cake and the topping - to make it so "tall" - i say it all depends on your pan size. this recipe is fine for 9x9, but a 10x13 or larger (which is her standard) would require 2x.

1 1/2 cups Bisquick
1/2 cup sugar
1 egg
1/2 cup milk
2 Tablespoons shortening (I suspect I'll use butter)
1 teaspoon vanilla

Bake at 350F for 30-40 minutes, until it passes the toothpick test.

Lazy Daisy Topping

1/2 cup shredded coconut
1/3 cup brown sugar
1/4 cup nuts (walnuts or pecans)
3 Tablespoons butter
2 Tablespoons millk

Mix together in a bowl, till kind of carmel-y goopy. When the cake is cooled, spread the topping over it and broil briefly until the top browns.

Enjoy!
