My dear friends at epicurious had just the thing (for me to modify - I mean, like *I* am going to just follow a recipe? nah) and they are delish. Here is the recipe - with my modifications....
Oatmeal-Apricot-Pistachio Cookies
1/2 cup unsalted butter, softened (of course, I like Plugra)
1 cup light brown sugar
1/2 teaspoon vanilla
1 large egg
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups old-fashioned rolled oats (not quick-cooking)
3/4 cup dried apricots cut into pieces
1/2 cup shelled pistachios
Preheat the oven to 350F. Put the racks in upper and lower third position of the oven. Line your baking sheets with parchment paper.
Beat the butter and sugar until fluffy, then beat in the vanilla. Add the egg and beat until combined well. Sift together the flour, baking soda, salt, and cinnamon then add to mix at low speed until just combined. Fold in oats, apricots, and pistachios.
Spoon rounded tablespoons of dough about 2 inches apart onto baking sheets. Bake cookies, switching position of sheets halfway through baking, until golden brown, 16 to 18 minutes.

Andrea,
Hey there! When did you move to Knoxville? Have you found Stephanie and Marriane yet?
What end of town are you in?
Hi Kevin-
Thanks for stopping by! I moved to Knoxville (West) a bit over a year ago - Feb 1, 2006.
I had actually found Marriane at the unemployed cook, but not Stephanie - so I thank you for the link!
I had actually emailed you a while back inquiring about cooking classes. While I think I have the baking thing down pretty well, I really need to work on my understanding of flavor profiles for non-desserts. The classes that I have found so far have been a bit of a disappointment (UT, Glass Bazaar) - but I think it is because I secretly want to run off to the CIA....
Andrea,
I don't know about UT, but the classes at WS and Glass Bazaar are as much about entertainment as learning. I enjoy teachinng them, but the times I've proposed what I would call serious classes not enough people have signed up.
