C is for Cookie

If it is good enough for Cookie Monster, it is good enough for me. I'm taking a bit of a creativity break from cakes - other than for birthdays, I'm just a bit bored of them. Of course, I have some cooking classes coming up - so you never know what that might bring.

The very nice Quaker man on the box of oats was smiling at me from the pantry every time I opened the door. Originally purchased who-knows-when for who-knows-what, they have been taking up residence in the pantry - until.........dun dun dun......cookies!

Oatmeal Cookies with Sour Cherries (or Chocolate chips)
3 cups steel cut rolled oats (NOT instant)
1 cup brown sugar
1 teaspoon vanilla
1 cup unsalted butter (Plugra!)
2 eggs
1/3 cup water
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup dried sour cherries
1 cup toasted walnut pieces

Preheat the oven to 350F. Line baking sheet with parchment paper (seriously one of the best things I have learned about recently!)

In the bowl of your trusty stand mixer, blend the butter and sugar until smooth. Scramble the eggs with water and vanilla extract, then beat into the butter mixture.

Sift the flour, baking soda, salt and cinnamon, then add the dry mixture to the wet, mixing until all ingredients are combined. Stir in the oats, fruit (your choice - I just hate raisins) and nuts.

The cookies work well in any size option from small to generous - so use your own discretion. Bake 12-15 minutes at 350F or until the bottom of the cookies are golden brown.
