Aunt Marge's Cheesecake

Aunt Marge claims that she can't even boil water - but luckily enough, cheesecake doesn't require boiling water! Her cheesecake is famous - everyone requests that she make it for holidays and family dinner occasions. My dad recently told me that the cheesecake she brought for Easter was the creamiest and best cheesecake he had ever had. Lucky for me - she was willing to share the recipe.

Aunt Marge's Cheesecake
Preheat the oven to 375F.

CRUST
1 3/4 cups graham cracker crumbs
1/4 cup chopped walnuts (I suspect pecans or pistachios would also be good)
1/2 teaspoon cinnamon
1/2 cup melted butter

Mix all ingredients and press on sides and bottom of 9" spring form pan.

FILLING
3 eggs
1 cup sugar
16 ounces of cream cheese (2 8oz pkgs)
2 teaspoons vanilla
3 cups sour cream (I will use greek yogurt instead - but Aunt Marge uses sour cream)

Combine the eggs, cream cheese, sugar & vanilla, beat until smooth. Blend in the sour cream. Pour into prepared crust.

Bake at 375 (I've heard many people insist that cheesecake must be baked in a water bath, so I intend to use one - Aunt Marge didn't specify it) for 1 hour, cool and top with topping of choice (Aunt Marge uses either cherry or blueberry pie filling), then chill 4-5 hours before serving.
